Meet Chef Michelle
Michelle gained her passion for cooking from her grandmother, whose apple tarts were “heavenly”! Michelle’s first step on her chef career commenced in Ashford Castle, Cong, Co. Mayo. Whilst in Ashford, her culinary skills were noted and she soon began her formal chef training at Killybegs Cookery School. Michelle quickly made a name for herself in the top restaurants in Galway and then decided to spread her wings and gain some experience worldwide, firstly in Asia before settling in Australia for 15 years where she held position of Head Chef for a very busy kitchen for 7 years. With vast knowledge and experience, she has now returned to the West of Ireland where she joins Niki in the Bia kitchens and is truly loving every moment of sourcing and cooking with local ingredients using traditional methods handed down through the generations.
